Vegan Gado Gado Inspired Noodle Bowl

 

Ingredients: 

  • Noodles

  • 1/4 cup of Edamame

  • Kale

  • Salt

  • 1/2 lemon

  • Cucumber

  • Capsicum

  • Carrots

  • Red Cabbage

  • Coriander

  • Mint leaves

  • Sweet chili

  • 2 tbs peanut butter powder

 

 

 

Instructions:

  1. Start by cooking the noodles. The trick is to add cold water. ;) I will also be adding 1/4 cup of edamame. 

  2.  While the noodles are cooking up, it’s time to chop the veggies! Start chopping the kale then put them into a container or bowl. Then add in salt and squeeze a 1/2 lemon. 

  3.  Cut your cucumber and capsicum into strips. Grate the carrot and chop the red cabbage, coriander, and mint leaves. 

  4.  Drain the noodles.

  5. Then make the peanut sauce. In a small bowl, add sweet chilli, and peanut butter powder. Then add a little bit of water and mix well. 

  6.  For plating: Add all the chopped veggies and cooked noodles and edamame in a bowl then spread the peanut sauce on top. You may also add a little bit of coriander.
