One Pot Pasta

Ingredients:

1 whole onion

garlic

6 courgettes

1 capsicum

A handful of stuffed green olives

Pitted black olives

Tin of pasta sauce

Tin of chopped tomatoes

Capers

Red wine vinegar

salt

pepper

3 cups of water

Pasta

Parsely

Basil

Instructions:

  1. Chop onions and garlic then saute using a pressure cooker. Use water to saute the garlic and onion. You

    can then add the chopped courgettes.

  2. Chop capsicum then put into the pressure cooker

    together with the stuffed green and black olives.

  3. Add in pasta sauce and chopped tomatoes.

  4. Add in capers, red wine vinegar, salt, and pepper. Then add the pasta and 3 cups of water. The trick is to make

    the pasta covered with water so it actually cooks.

  5. Then turn on your pressure cooker and set it to 3 mins.

  6. Add the chopped parsley and then basil.

  7. Have a taste test, you may want to add garlic salt, and pepper.

  8. You can also add hummus and chili powder when

    plating.
