Broccoli and Pea Soup

Ingredients: 

  • Broccoli

  •  Sweet potato

  •  Peas

  •  Onions

  •  Garlic

  •  Mint leaves

  •  ½ tbsp of veggie stock

  •  Vegan chicken stock cubes

  •  Soy milk

  •  Sprouts

  •  Chilli flakes

  •  Pepper

 

 

 

Instructions:

  1. Chop onions and garlic.
  2. Peel and chop sweet potatoes. 
  3. In a pot, add onions and saute with water. 
  4. Add the sweet potatoes and add enough water to cook them. Let it boil until it’s nearly cooked. 
  5. Add 1 pound of peas, and broccoli. 
  6. In a blender, add the cooked veggies. Then add veggie stock and vegan chicken stock cubes. 
  7. Add soy milk and mint leaves. Then blend. 
  8. Put it in a container. 
  9. Ready to plate. In your bowl, add the blended soup. For toppings, add peas sprouts, chili flakes, pepper, and a little bit of hummus.
