Vegan Fried Rice

Ingredients:

1 onion
-
1 thumb of ginger
-
1 bell pepper
-
1 broccoli
-
Yellow Curry Paste
-
Garlic paste
-
1 tbsp of curry powder
-
1/2 cabbage
-
Leftover rice
-
Mixed veggies
-
Can of pineapple
-
Lemon
-
Veggie Stock
-
Soy sauce
-
Coriander
Instructions:
-
Add chopped onion and grated ginger, then saute them using water.

Add garlic and yellow curry paste. Then also add 1 tbsp of curry powder.

Chop the bell pepper and broccoli then add to the pot.

Add 1/2 of a cabbage, leftover rice, a few handfuls of mixed veggies, and pineapple.

Add in the lemon, soy sauce, and a little bit of veggie stock.

You can also put additional veggies if you want.

Once cooked, add coriander.
