Vegan Fried Rice

 

Ingredients: 

  • 1 onion

  •  1 thumb of ginger

  •  1 bell pepper

  •  1 broccoli

  •  Yellow Curry Paste

  •  Garlic paste

  •  1 tbsp of curry powder

  •  1/2 cabbage

  •  Leftover rice

  •  Mixed veggies

  •  Can of pineapple

  •  Lemon

  •  Veggie Stock

  •  Soy sauce

  •  Coriander

Instructions:

  1. Add chopped onion and grated ginger, then saute them using water.

  2. Add garlic and yellow curry paste. Then also add 1 tbsp of curry powder.

  3. Chop the bell pepper and broccoli then add to the pot.

  4. Add 1/2 of a cabbage, leftover rice, a few handfuls of mixed veggies, and pineapple.

  5. Add in the lemon, soy sauce, and a little bit of veggie stock.

  6. You can also put additional veggies if you want.

  7. Once cooked, add coriander.
